Preparation time: 10 min + 2 hours rest time
- 500 g de brocciu (Corsican fresh cheese)
- 500 g floor
- 2 eggs
- 25 cl water
- 1 sachet of baking powder
- 1 pinch of salt
- 1 tablespoon eau-de-vie
- 1 lemon zest
- some caster sugar
- vegetable oil
- For the dough, put in a bowl the flour, baking powder, eggs, lemon zest, eau-de-vie and a pinch of salt. Stir with a whisk until obtaining a light dough without lumps.
- Leave it to rest for 2 hours.
Crumble the brocciu in a plate and heat the cooking oil.
Take with a tablespoon a piece of dough and pour it on the pieces of brocciu.
Dip each piece of dough in the oil until the fritter becomes brown.
Wipe off the fritter of its oil and dust it with caster sugar before savouring it.
