A Salviata

  • 500 g flour
  • 150 g sugar
  • 20 g icing sugar
  • 150 g butter
  • 2 eggs
  • 1 sachet of yeast
  • 1 cup water
  • 1 zest of grated lemon
  • 1 sage leaf


  1. Dry the sage leaf in a warm oven then mash it until it turns into power. Thin down the yeast with warm water and let it rest for an hour.
  2. In a bowl, mix the yeast, the flour, the sugar, the melted butter, the zest and the eggs as well as the sage leaf, then salt.
  3. Knead the pastry, and let it rest covered for 1 hour. Preheat the oven to 180°C.
  4. Split the risen dough in 4 parts of about 15 cm, then shape it as an S on an oily plate or greaseproof paper.
  5. Cook for 20 minutes. Take it out of the oven and dust the top with icing sugar.
