Omelet with brocciu and mint


Preparation time: 5 minutes.
Cooking time: 3 to 5 minutes.



  • 1 brocciu (Corsican fresh cheese)
  • 6 eggs
  • 2 tablespoons olive oil
  • 6 mint leaves
  • salt and pepper


  1. Break and beat the eggs on a bowl with salt and pepper.
  2. Chop the mint leaves.
  3. Heat the olive oil in a frying pan. Pour the preparation and spread small pieces of brocciu and the mint.
  4. Cook on a low heat for about 3 minutes to make a runny omelet or 5 minutes for a fully cooked one.
