Ingredients :

For the custard:

  • 50 cl whole milk
  • 8 eggs
  • 100 g caster sugar
  • 1 organic lemon
  • 4 slices of stale bread

For the caramel:

  • 125g caster sugar
  • 5cl water
  • a few drops of lemon


Preparation :

For the custard:

  1. Gather the milk, sugar and the stable bread cut into pieces in a pan.
  2. Blend and bring to a boil for about 2 minutes. Leave it to cool.
  3. Grate the lemon.
  4. Stir in the eggs and the lemon zests into the blend and mix everything together.
  5. Preheat the oven at 180°C.

For the caramel:

  1. Pour the sugar and water in a pan. Add the lemon
  2. Bring to a boil without stirring. When the sugar starts to darken, move the pan to spread the caramel.
  3. Pour the caramel in the bottom of a cake tin.
  4. Add the custard mixture and cook it in a bain-marie at 180°C for 55 minutes.
  5. Leave it to cool and put it in the fridge. Remove from the tin and serve cold.
